Cinnamon Coffee Cake

cinncoffeecake

I received this recipe from my boyfriend’s mom who used to make it for them as kids.  I tweaked it until it tasted the way I wanted it to.

Ingredients

1/2 cup butter, melted

1.5 cups sugar, divided

2 eggs or 1/2 cup egg whites

2 teaspoons vanilla extract

1.5 cups all-purpose flour

3 teaspoon baking soda

1 teaspoon salt

1/2 cup sour cream

2 tablespoons ground cinnamon

1 tablespoon nutmeg

1 tablespoon

3/4 brown sugar and cinnamon for top layer of batter

Directions

In a large bowl,  butter and 1.5 cups sugar until light fluffy. Add eggs, one at a time, beating well after each addition. Beat in vanilla. Combine flour, baking soda and salt; add alternately with sour cream, beating just enough after each addition to keep batter smooth.

Spoon batter into a greased 10-in. tube pan. Combine cinnamon,  brown sugar; sprinkle a over batter in pan. Bake at 350° for 20 to 25 minutes or until a toothpick inserted near the center comes out clean. Cool for 15 minutes before removing from pan to a wire rack to cool completely.

Recipe of the Week

From MsFormaldehyde’s Kitchen, of msformaldehyde

I make this all the time. It is delicious!

Jalapeno Bruschetta
Serves: 8
Prep: 10 min
Cook: 2 min
Total: 12 min

Ingredients:

4 tablespoons olive oil
8 slices (1/2 inch thick) cracked-wheat country bread, or 16 slices crusty baguette (sliced on the diagonal)
2 cans (6 ounces each) light tuna in water, drained and flaked
1 rib celery, finely chopped
1/4 cup chopped red onion
1/4 cup chopped fresh cilantro or flat-leaf parsley
2 tablespoons lemon juice
2 jalapeño chile peppers, seeded and finely chopped (wear plastic gloves when handling)
Ground black pepper

Directions:
1. Coat a barbecue grill or ridged grill pan with olive oil spray and heat to medium-hot. Using 2 tablespoons oil, evenly brush both sides of the bread slices.

2. Grill the bread, in batches if necessary, until one side has dark grill marks, and then turn to toast the other side. Transfer to a platter.

3. In a medium bowl, mix the tuna, celery, red onion, cilantro or parsley, lemon juice, jalapeño peppers, and black pepper to taste. Stir in the remaining 2 tablespoons oil.

4. Spread the tuna mixture evenly over the toast. If using the country bread, cut each slice in half.

>I did my own makeup when I got married many years ago.
If you plan on doing your own makeup for your wedding day, this is a great idea. Go to a professional make up artist and get your makeup done before just as a walk through for the big day. It will give you a boost for your wedding day and every day makeup.
Eye brows, spend the money to get them shaped by a professional a few days before your wedding.
Also, make sure to take a picture with your makeup to see how some pictures turn out. Mineral makeup is usually not great for photographs.
Here are some cool wedding hair pieces I found on etsy.
